Description: Lactococcus lactis subsp. lactis. This subspecies is used to make soft cheeses. Lactococcus lactissubsp. lactis Il1403. This strain is used widely in laboratory research and is a plasmid-free derivative of strain IL594 isolated from a cheese starter culture. The genome shows many insertion sequences and prophages, and surprisingly, a large number of genes involved in respiration, suggesting that this organism may aerobically respire.
