Description: The objective of this study was to determine the thermoresistance of strains collected in raw milk (Lactobacillus plantarum RKG 2-212 and Lactobacillus delbrueckii RKG R10) and to evaluate its activity (viability and volatile organic compound production) during model Cheddar production. The genome analysis was performed to link the parameters evaluated to the genes presented in these bacteria.
