Description: These strain were isolated based on the technological properties to produce aroma compound (diacetyl, acetoin and 2,3 butanediol). Three strains are citrate fermenting while one is defective in this phenotype. The goal of our studies is provide futher genetic evidence of the possibility to use a rational selection based in pheno and genotyping of this group in order to obtain adjunt culture to cheese production.
