Description: Industrially, lactic acid bacteria are mainly preserved or distributed in freeze-dried state. However stabilization generates stress conditions that affect cells and often leads to a loss of viability and metabolic activity. As a consequence, one major challenge is to understand the cellular mechanisms involved in bacterial survival after freeze-drying. So, an integrative approach, which will combine FTIR, flow cytometry, proteomic and transcriptomic methods, on two extreme conditions in regards with freeze-drying resistance has been executed to allow a better understanding of the cell mechanisms responsible of bacteria degradation.
