Description: Lactobacillus plantarum 16 was isolated during a large scale screen to identify lactic acid bacterial strains with antifungal activitites. It was shown to have broad-spectrum antifungal activities towards a variety of food-spoilage fungi and has been successfully used as a biopreservative in a number of food models to extend product shelf life. The genome sequence of Lb. plantarum 16 can be used as a basis to discern the machinery involved in antifungal production.
