Project name: Alicyclobacillus hesperidum
Description: Alicyclobacillus sp. DSM 11985T was isolated from geothermal soil and has not been classified to species. We found that the strain produced guaiacol, which is of interest from the viewpoint of food spoilage in food microbiology. 16S rRNA gene sequence analysis revealed that strain DSM 11985T was found to be closely related to Alicyclobacillus hesperidum with 99.6% similarity. However, strains of A. hesperidum did not produce guaiacol and therefore a polyphasic taxonomic evaluation of strain DSM 11985T was performed. The results showed that DSM 11985T and A. hesperidum strains showed similar phenotypic characteristics except several differences in biochemical / physiological tests including guaiacol production.
