Description: The strain was isolated from honeybee residing Cotoneaster, flower (CG3), Galtee farm located Co. Tipperary Ireland, on Fructose Yeast Peptone (FYP) agar. The strain was isolated from fructose-rich environments and is likely to utilize fructose more efficiently, and can produce mannitol at elevated amounts with greater yield. 16S RNA showed that Leuconostoc mesenteroides strain DPC 7261 was found to possess the mdh gene. DPC 7261 produced highest mannitol naturally in fermented milk medium. L.mesenteroides DPC 7261 demonstrated the highest values for all calculated fermentation parameters in Fructose Milk (FM) by exhibiting higher fructose consumption (8.99 g/L), mannitol production (6.50 g/L) and yield (0.72 g/g fructose). Storage modulus G' (>0.1 Pa.) indicated a milk gelation time for L. mesenteroides DPC 7261 of 14.52 h. Due to its mannitol production capability in fermented milk, we further investigated its genome profile by WGS.
