Description: The Project is focused on the study, understanding and exploitation of aerobic and respiratory metabolism in wild and mutant strains of Lactobacillus casei group. In particular, the effect of aerobic and respiratory metabolism on the growth, stress tolerance, proteomic and metabolic profiles has been investigated in different strains of L. casei group, in order to improve survival of starter and probiotic cultures and to enhance the nutritional and technological properties of fermented foods. A complex approach based on transcriptomic, proteomic and metabolomic analyses has been used to carry out all research activities.
