Description: The yeast Saccharomyces servazzii is a member of the Saccharomyces sensu lato group. Unlike most other Saccharomyces yeasts, Saccharomyces servazzii can only ferment glucose and galactose. It is also more limited in its ability to assimilate carbon sources. Saccharomyces servazzii is resistant to the antibiotic cycloheximide. It can be found in soil, feces, and tree exudates.The exact number of chromosomes that Saccharomyces servazzii has is not definitively known; one electrophoretic study resolved 7 chromosomes, leading to an estimated genome size of 10.8 Mb, whereas another detected at least 12 chromosomes, resulting in an estimated genome size of 12.3 Mb.
