Description: Yarrowia lipolytica is a nonpathogenic yeast that can use hydrocarbons and various fats as carbon sources. It is often isolated from foods, such as cheese and sausage, or from natural environments, such as oil fields. Yarrowia lipolytica is very distantly related to other yeasts; instead, it shares several properties with filamentous fungi, including differentiating into a true mycelial form under certain growth conditions. Yarrowia lipolytica does not undergo mating type switching. This yeast is used as an organism in basic research, as well as for industrial applications, such as the production of citric acid and flavoring agents.The Yarrowia lipolytica genome is approximately 20.5 Mb, organized in 6 chromosomes.
